What it is

The oldest item in this aisle — soybeans soaked, ground, cooked and strained, a genuine East-Asian food for centuries. Closest of any plant milk to cow's milk on protein.

Why your biology objects

A real whole-bean food (~7g protein a cup), so it's the most defensible plant milk — but it carries soy's isoflavones (genistein, daidzein), ERβ-binding phytoestrogens, at food doses that are net-neutral in most people. The footnote is the phytoestrogen, not a glucose or seed-oil problem. Pick the whole-bean, unsweetened version over isolate-based ones.
