Sodium benzoate

What it is

Keeps the recipe from fermenting in the bottle — common in sodas, dressings, and acidic drinks.

Why your biology objects

Paired with vitamin C (ascorbic acid), benzoate can react to form benzene, a known carcinogen, especially with heat or light. On its own it's mild; its presence mostly means the product can't defend itself without help.
