Polyricinoleate

What it is

PGPR — a castor-oil derivative that lets chocolate makers use less cocoa butter and keep the flow.

Why your biology objects

A synthetic surfactant standing in for cocoa butter: it reduces the fat needed for smooth flow, so the recipe swaps a real ingredient for a cheaper sentence. Low acute toxicity, but it's pure cost-engineering.
