Paneer

What it is

Fresh and brined cheeses set simply with acid or rennet — paneer from milk and lemon, feta from sheep's milk and brine. Two or three ingredients, no re-engineering.

Why your biology objects

Minimally processed whole-milk cheese — casein, fat and calcium intact — coagulated the traditional way. Paneer isn't cultured so it keeps more lactose; the brined ones carry sodium from the cure. Real food, a world away from "cheese product."
