ANTIFOAM

Dimethylpolysiloxane

What it is

Silicone antifoam, there so the fryer oil doesn't bubble over during its week of continuous use.

Why your biology objects

Inert silicone, poorly absorbed — its own toxicity is low. What it documents is the working conditions of the oil: a fryer running continuously long enough to need an anti-foaming agent is not making fresh food.
