INSECT PROTEIN

Cricket flour

What it is

Milled crickets or other insects — entomophagy is deeply ancestral (chapulines in Oaxaca, mopane worms in Southern Africa), just novel to the modern Western plate.

Why your biology objects

A whole animal, minimally processed: complete protein with B12, bioavailable iron and zinc, plus chitin from the exoskeleton acting as fibre. One real footnote — the muscle protein tropomyosin cross-reacts with shellfish allergy, so crustacean-allergic people should avoid it.
