What it is

Whole pseudo-grains and unrefined rice — bran and germ intact, and most of these are gluten-free.

Why your biology objects

More food than refined grain — fiber, minerals, and B-vitamins still attached — but they carry the same phytic acid that locks up some of those minerals, and brown rice can concentrate arsenic from soil. Soaking and rinsing were the traditional fixes; the grain still benefits from the pot.
