Why your biology objects
Raw and in quantity, glucosinolates can slow iodine uptake (the goitrogen story); cooked, most of that activity is gone and what survives converts to sulforaphane, the compound everyone's chasing. Here the defense and the benefit are the same chemistry — heat just tips the balance toward benefit.
